Apple Cake
This apple cake is quick and easy. Oh, and really tasty too.

Ingredients
   
1.5cupssugar
0.5cupvegetable oil
2eacheggs
3tsp.vanilla extract
2cupsall-purpose flour
2tsp.baking soda
2tsp.cinnamon
0.25tsp.salt
4cupsgolden delicious apples, cored, peeled and diced
1cupnuts, chopped
18 oz packagecream cheese, room temp
3Tbsp.butter, room temp
1.5cupspowdered sugar
Directions
 
Preheat oven to 350 F. Generously grease a bundt pan. In a medium bowl, using an electric mixer, cream together sugar, oil and eggs. Add 2 tsp. of the vanilla extract and mix well. Sift together dry ingredients and stir into egg mixture. Fold in the apples and nuts. Pour batter into greased bundt pan and bake at 350 F for 50 - 60 minutes until a toothpick inserted into the cake comes out clean. Remove from oven and let cool. Transfer to serving platter and ice with icing (see below).
For icing: in a medium sized mixing bowl, cream together butter and cream cheese with an electric mixer. Add 1 tsp vanilla and slowly add powdered sugar, mixing until smooth.
