Thai Peanut Sauce
This is the classic Thai Peanut Sauce that you see in every Thai restaurant. The perfect dipping sauce for our Thai Saté. Also great by the mouthful with a spoon!!!

Ingredients
   
114 oz cancoconut milk
2Tbsp.red curry paste (nam prik gaeng ped)
0.25cupfish sauce (Tiparos)
3Tbsp.sugar
0.5tsp.chili pepper flakes
8oz.roasted peanuts, chopped
Directions
 
Chop peanuts using a hand held chopper or a few quick pulses in a food processor. Combine all of the ingredients in a medium sized saucepan, stir well. Heat over medium heat and let simmer for 20 minutes, stirring occasionally. Makes about 2 ½ cups peanut sauce.
