Herb Crusted Roasted Rack of Lamb
This roasted rack of lamb is totally out of this world. We need to state a little disclaimer here. If you are going to pay the price for rack of lamb, make sure you do it right. By this I mean that you get a quality piece of meat and really watch it, pull it right from the oven when it's ready. We recommend rare. If you are afraid, medium rare is really as far as you should go. It is meant to be served this way, that's why it is so expensive.

Pan Seared Filet Mignon
Mmmmmm. . . . filet mignon. This recipe is geared for one filet. Adjust it as you want depending on how many you will be making. Buy your filet from a reputable butcher, it is worth the extra few bucks. If you like them extra thick, buy a nice 12+ ounce filet and cut in half for two (or eat the whole thing, fatty).
