Pan Seared Sea Scallops
These seared sea scallops are AWESOME. Buy the scallops from a reputable fish market, make sure they are fresh. This will ensure a tasty, sweet and succulent finished product. "Dry packed" is the best.

3eachsea scallops
0as neededsalt and pepper to taste
1Tbsp.extra-virgin olive oil

The recipe calls for 3 scallops. Three scallops per person, that is. Season the scallops with salt and pepper. Heat 1 Tbsp olive oil in a medium sized skillet (preferably non stick) over medium high heat just until it smokes. Place the scallops in the pan. Cook for one and a half minutes ONLY on each side TURNING ONLY ONCE. The scallops should be translucent in the center, or medium rare. If you cook these too long they will be chewy and loose their sweet flavor. OK, now it's time to put 'em in your mouth!!
