| These can be done 4 at a time. Two at a time works better; you get a more even cook. Wash the potatoes. Wrap each potato in a couple of paper towels. Run the paper wrapped potato under some cold water, squeeze shake off excess water, but leave VERY damp, almost to the point where it is dripping. Place the potato in a heavy dishtowel and roll it up like a burrito. Do this for each potato, so they are wrapped separately. Microwave on high setting for 7 minutes (1 - 2 potatoes) or 12 minutes, if more than two. After the 7 minutes, turn potatoes and microwave for an additional heating cycle (the same amount of time for the first round). After the second cycle, squeeze potato, if it gives, you're done. If not, microwave a little longer. We all know that "all microwaves vary according to . . " so just adjust to your micro oven. Once tender, LEAVE THE POTATOES WRAPPED IN THE TOWEL for 10 minutes. This will allow them to continue cooking and the steam that the towel is holding in will heat the potato evenly. That's it--garnish it up and put it in your mouth!! |
