| Drain and rinse beans. In a large bowl, combine beans, onion and parsley. In a separate small bowl, whisk together vinegar, sugar and olive oil until well combined. Pour over bean mixture and toss. Add salt and pepper to taste (about 1 tsp. of salt and 1/2 tsp. pepper). Store in an airtight container and refrigerate at least 4 hours, preferably overnight. |
