Ingredients
   
2Tbsp.olive oil
1largeonion, diced
1stalkcelery, chopped
2clove(s)garlic, minced
1tsp.basil, dried
1tsp.rosemary, dried
1tsp.oregano, dried
1tsp.thyme leaves, dried
0.25cuppearl barley
2mediumwhite potatoes
2largecarrots
8cupchicken stock
1largeturnip
1can(s)red kidney beans
0.667cupsmall shell pasta
0.25cuptomato paste
2cupsgreen cabbage, shredded
2wholezucchini, sliced
0.5tsp.sugar
0.33cupred wine
Directions
 
Heat oil in a 5 quart kettle over medium heat. Add onion, celery, garlic and herbs; cook until onion is soft. Over high heat, add barley, potatoes, carrots and stock and bring to a boil. Reduce heat, cover and simmer for 20 minutes.
Mix in beans (with liquid), pasta and tomato paste. On high heat, bring to a boil and add the sugar and wine. Reduce the head, cover and gently boil until pasta is almost done (approximately 10 minutes). Add cabbage and zucchini and cook until tender-crisp - about 5 minutes. Season to taste with salt and pepper.
