| Heat oil in a 5 quart kettle over medium heat. Add onion, celery, garlic and herbs; cook until onion is soft. Over high heat, add barley, potatoes, carrots and stock and bring to a boil. Reduce heat, cover and simmer for 20 minutes. |
| Mix in beans (with liquid), pasta and tomato paste. On high heat, bring to a boil and add the sugar and wine. Reduce the head, cover and gently boil until pasta is almost done (approximately 10 minutes). Add cabbage and zucchini and cook until tender-crisp - about 5 minutes. Season to taste with salt and pepper. |
