Chicken Enchiladas
A while ago as I was leafing through a magazine, I came upon a page advertising Crisco oil. I don't know why, but it caught my eye. It might have been the picture, or it might have been the way the recipe was printed on the page. I ripped the page out (it was my magazine) and tried it that night. My husband loved it--me too. I made everything according to the directions. I did make Guacamole to put on the top. Chicken Madras
Love making curries from scratch and this is a really simple, tasty one. It has tomato paste and water, which could probably be substituted with tinned tomatoes and some salt, but I have not yet done so. Crockpot Chicken Stock
Nothing beats the flavor of homemade chicken stock. But some recipes are intimidating for the home cook. Here's a no-fuss way to make it that doesn't require you to be there to attend it half the day. Unlike some recipes that yield gallons, this gives you a nice, managable 2qts in a concentrated, jellied form that can be diluted to 4 qts if you want to. You can use the carcasses from any kind of cooked chicken that doesn't have breading, tomato sauce, or strong spices like curry or hot sauce on it. Herbed Lemon Chicken in a Crock Pot / Slow Cooker
This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. Has to be my signature dish. Everyone loves it. I must admit though, that I got the honey mustard recipe from my hero Alton Brown! Oh well, this is my most requested dish for pot lucks and meals for people at church. Adjust it if you need to for more servings. Victorious Vegetable Stock
Finally, a vegetarian stock so rich, flavorful and fragrant that it can really hold its own against chicken stock! Use this in any recipe that calls for chicken stock, or eat it alone as a lovely broth. The nutritional yeast adds nutrients, flavor and a golden color to the broth (please make sure you are not using any other type of yeast! Baker's yeast and Brewer's yeast will not work). The optional addition of parmesan rind increases the richness in a wonderful way - My local Italian deli gives it to me for free. But leave it out for a vegan / parve stock. This broth beats any packaged vegetable stock hands down, if I do say so myself :) -- posted by What's Cooking?
