TAMALE ASSEMBLY
Lay out corn husk with the wide end to your left and the narrow end to your right.
Place about 2 Tbsp. of masa mixture in the lower corner of the husk.
Flatten out masa to a rectangular shape.
Place desired filling in the middle of masa.
Start rolling the tamale keeping filling in the middle of masa and wrapping it like
a pig in a blanket.
Take narrow end and fold over.
Place another husk on table like the one before. Place already rolled tamale on
new husk, with closed end facing away from narrow end of new husk and open end facing
the narrow end.
Start rolling as you did before.
Roll it up.
Fold over narrow end closing off open end of first husk. Tie up tamale to “hold
the fold” using a strip from a long piece of husk.
Tie into a double knot and move on to the next one!!
